Buttermilk Biscuits

2 cups flour
1/4 tsp. baking soda
1 tbs. baking powder
1 tsp. salt
6 tbs. butter-cold
1 c. buttermilk

Preheat your oven to 450°F.

  1. Combine the dry ingredients in a bowl then
    cut the butter into pads and cut into the flour until it is all mixed.
     I use my hands to mix it all up. There will be chunks of butter. Thats ok.
    Add the buttermilk and mix until combined.
    If it appears on the dry side, add a bit more buttermilk. It should be wet.
    Turn the dough out onto a floured board.
    Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick.
    Use a round cutter to cut into rounds. I use the top of a cup.
    You can gently knead the scraps together and make a few more, but they will not be anywhere near as good as the first ones.
    Place the biscuits on a cookie sheet- if you like soft sides, put them touching each other.
    If you like"crusty" sides, put them about 1 inch apart- these will not rise as high as the biscuits put close together.

    Bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.

Gooey Layered Cookie Bars

1 stick butter
1 1/2 c. graham cracker crumbs
 Mix together and then press into a 9x13 greased pan. 

Top with:
1 c. chocolate chips
1 c. peanut butter chips
1 c. butterscotch chips
chopped nuts (optional)
 coconut (optional)
Spread evenly over crumbs
Then cover the entire bars with 
1 can sweetened condensed milk

Bake at 350 for 25 minutes or until brown and bubbly.
Cool completely and then cut into bars.

Oat Bran Muffins

3/4 c. whole wheat flour, or gluten free flour
3/4 c. oat bran
1/2 c. brown sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1 mashed banana
1/2 c. applesauce
2 egg white or 1 egg
2 tbs. coconut oil
1/2 tsp. vanilla
1/2 c. shredded carrot
1/2 c. walnuts (optional)
1/2 c. dates (optional)

Mix dry ingredents in a bowl and wet in a bowl. 
Then combine them together and add the carrots, walnuts and dates.
I like to add blueberries sometimes too. 

Put into muffin pans evenly and 
Bake at 350 for 20 mins.

Carmel Apple Dip

1 8 ounce package low-fat cream cheese, softened
3/4 c. brown sugar, packed
1/2 c. powdered sugar
1 tsp. pure vanilla extract
3/4 c. English Toffee Bits
3 tart apples sliced 

In a small mixing bowl with an electric mixer, 
beat together the cream cheese, vanilla, 
and sugars on medium speed until smooth.
 Stir in toffee bits.
Serve with sliced apples or fruit.

Easy Pizza Dough

2 Tbs yeast
2 c. warm water
4 Tbs oil
2 tsp salt
2 tsp sugar
5 c. flour

Dissolve yeast in water. 
After dissolved, stir in other ingredients. 
Knead all together. 
Let rise about 5 minutes then roll out onto pizza pan. 
Add  sauce, chesse and toppings.
Bake at 425 for 20-25 minutes.

Homemade Peach Jam

4 c. ground up peaches
1/4 c. fresh lemon juice
1 1/2 c. sugar
5 heaping Tbsp clear gel
1/2 tsp. ascorbic acid

Wash and peel peaches. Smash then all up
and put into large pot. Add the other ingredients
and stir together well. Bring to a boil and let boil 
for about 10 mins and until thick. Stir constantly
to prevent sticking. Then pour into hot clean jars
and put lids on. As they cool, they will seal. 

*I usually 4 times this recipe and it makes 12 filled pint sized jars.

Garlic Cheddar Biscuits

Mix Together:
 2 c. bisquick
1/2 c. water
1 c. cheddar cheese

In a bowl melt:
1 stick butter
1 tsp. parsley flakes
1/4 tsp. dill weed
1/4 tsp. itialian seasoning
2 Tbs. parmesan cheese

Plop spoonfuls of biscuit dough onto a cookie sheet 
that has been greased lightly with your buttery garlic stuff. 
Then with a pastry brush, brush garlic butter over biscuits. 
Bake at 400 for 10-14 minutes. Serve hot!
