Sour Cream Noodle Bake

1 lbs. ground hamburger
1 can 15 ounce tomato sauce 
1/2 tsp. salt 
1 clove garlic
Freshly ground black pepper
 1 bag of egg noodles 
1/2 c. sour cream
 1-1/4 c. cottage cheese
 1/2 c. diced green onions
1 c. grated sharp cheddar cheese

In a frying pan brown meat and drain. 
Add tomato sauce salt and pepper and garlic.
 Set aside. 

Cook Noodles and drain.

In a bowl mix:
Sour cream, cottage cheese and green onion together.
Stir this mixture into the noodles.

Then layer the noodles with the meat sauce in a 9x13 pan. 
Top with sharp cheddar cheese. 

Bake for 20-30 mins until hot and bubbly.
Serve with green salad and crusty bread!

Chicken Tortiellini

1 package of three cheese tortellini
2 grilled chicken breast diced
2 cloves garlic
1/2 onion
2 Tbs. olive oil
1 large tomato
1/2 bag baby spinach
1 c. chopped mushrooms
1/2 c. heavy cream
1/2 c. parmesan cheese
salt and pepper to taste
italian seasoning

In a saucepan saute garlic and onion and then add spinach and mushrooms. Add cream and seasoning and bring to a boil for a few minutes to cook down. Add grilled chicken. 
Pour over cooked and drained pasta. Stir and top with cheese.

Grandpa JD's Baked Beans

Saute in 2 Tbs. oil:
1 chopped onion
1/2 chopped green pepper
1/2 c. chopped yellow
2 chopped small zucchini
1 chopped small yellow squash

Add:
2 cans of Bush's baked beans
3 Tbs. diced jalapenos
1/2c. ketchup
2 Tbs. brown sugar
Lawrys seasoning salt to take. 
Let simmer for a half hour and serve.

Grandma Sue's Clam Chowder

1 c. finely chopped onion
1 c. diced celery
2 c. finely diced potatos
2 cans minced clams
3/4 c. butter
3/4 c. flour
1 quart half and half
1 1/2 tsp. salt
dash of pepper
2 Tbs. red wine vinegar

Drain juice form clams and pour juice over chopped vegtables in a large sauce pan. Add enough water to barely cover vegetables. Simmer with lid in pot on medium heat until tender. 

In another pan:
Melt butter and add flour. Slowly add cream stirring constantly. Add drained clams and vinegar into butter flour sauce. Mix together with vegetables and water(undrained). Season to taste with salt and pepper. Heat through. Serve with warm crusty bread!

Grandma Sue's Teriyaki Sauce

1 bottle of Yoshida's teriyaki sauce
1 peeled and grated ginger root
1 Tbs. red pepper flakes
3 cloves minced garlic
1 can pineapple juice
1 c. brown sugar




Grandma Sandage BBQ Sauce

Saute together in a sauce pan:
1 finely chopped onion
1c. finely chopped celery
2 Tbs. butter

Add:
2 Tbs. vinegar
2 Tbs. brown sugar
1 small bottle ketchup
3 Tbs. worchestershire sauce
1 Tbs. mustard
1 c. water

Simmer for an hour or so until it cooks down a bit. 

Debbie's Salsa

46 oz. tomato juice
1 can diced tomatos
1 chopped onion
1/8c. garlic salt
1 small can jalapenos-drained
2 Tbs. sugar
2 tsp. pepper

In a blender put chopped onions and cover tiwth some of the tomato juice. Pour into large bowl. Put some jalapenos into the blender and cover with tomato juice and blend. Pour into the bowl. Run diced tomato quickly through the blender and pour into bowl. Add everything else, stir and refrigerate. It will get hotter as it sits!

*I like to add cilantro in with the diced tomatoes

Amazing Baked Ziti

Red Sauce:
Cook 1 pound of sausage
Add favorite marinara sauce (We like classico)
Set aside.

White Sauce:
1 brick of cream cheese
1 1/2 c. milk
2 cloves garlic minced
1/2 c. parmesan cheese
Mix and set aside.

Cook and drain 1 box of ziti noodles.

Layer in a 9x13 pan
noodles
white sauce 
red sauce
Top with grated mozzarella cheese. 

Bake 350 for about 40 mins.


Easy Chinese Noodles

1 package of chinese noodles
Cooked and drained.

Mix together:
1/4 c. soy sauce
2 cloves garlic chopped
2 Tbs. rice vinegar
 1 tsp. chili flakes
1/3 c. canola oil
1 Tbs. sriracha hot chili sauce
 
2 scrambled eggs
1/2 c. green onion chopped 
1/2 c. finely chopped peanuts(optional)
 
Toss all ingredients into the noodles and serve.
We like to have edamama beans and a salad with the noodles.
 
*You can buy the noodles and sriracha sauce in the chinese food section at any store. 
*I also double this for our family.
 


 
 
 

Ghost Cupcakes

1 softened brick of cream cheese
1/3 c. sugar 
1 egg
1 c. chocolate chips
 Mix together!

Make chocolate cupcake batter and fill with 

"Ghost Filling"

Drop your cupcake batter into cupcake liners
and put a spoonful of the "ghost filling" on top. 
It will drop into the middle as they bake. 

Frost and decorate for Halloween!

*You can also use the filling just as a cream cheese filling for any cupcake.

Sausage and Rice Casserole

In a frying pan, fry:

1 pound of sausage
1 onion, chopped
2 celery stalks chopped
Drain and rinse if you want.

Add:
1 c. rice
5c. water

Simmer for 30 mins. Stirring occasionally.

Serve with a green salad and fruit!

Chocolate Mint Brownies

Brownie Base:
1box brownie mix
prepared and baked
according to box.
Cool and spread the
filling on top.

Filling:
2 1/2 c. powdered sugar
3 tbs. butter
3 tbs. whipping cream
2 oz. of cream cheese softened
1/4 teaspoon mint extract
2 drops green food coloring

Topping:
1/3 c. whipping cream
1/2c. chocolate chips
1/3 c. butter
Melt in the microwave just
enough to mix smooth and shiny.
Top on cooled filling.

Chicken and Stuffing Casserole

1 box or package of herb stuffing
3-4 chicken breast cut into strips
swiss cheese
1/2 c. homemade cream of chicken soup
or
1 can of cream of chicken soup
1 c. sour cream
green peas
pepper

In a 9x13 place cut up chicken season with pepper and top with swiss cheese. 
Then top with soup and sour cream that has been mixed together.
Then spread the peas all over the dish and top with the stuffing. 
Sprinke the stuffing with a little water and cover with foil. 
Bake at 350 for about 45 mins.
 
 

Homemade Cream of Chicken Soup

4 c. chicken broth
1½ cups milk
¾ cup flour
 ½ tsp. onion powder
 ½ tsp. garlic powder
½ tsp. black pepper
 1 tsp. salt
  1. Combine the chicken broth and ½ cup of the milk in a large saucepan. Bring to a low boil.
  2. Meanwhile, in a small bowl, whisk the flour and seasonings into the remaining 1 cup milk until a smooth, thick mixture forms.
  3. Pour the flour and milk mixture into the saucepan with the broth mixture over low heat and stir continuously, whisking as the mixture simmers. Continue to simmer and stir/whisk until the mixture is smooth and thick, 5-10 minutes. The mixture will thicken a bit as it cools.

Pioneer Women Salsa

1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
1/4 cup Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
1/4 teaspoon Sugar
1/4 teaspoon Salt
1/4 teaspoon Ground Cumin
1/2 cup Cilantro (more To Taste!)
1/2 whole Lime Juice
 
Put all ingredients into a blender and pulse to desired consistency.
