Sausage Gravy

1 12oz pkg of Jimmy Dean Sausage
1/4 c. butter
1/4 c. flour
Milk
Salt and pepper to taste.

Cook sausage in a pan.
Add butter and flour and mix up.
Then add milk to cover the sausage.
Stir until thick. Can add more milk to make 
perfect consistency. 
Add salt and pepper. 
Serve over warm biscuits.
Recipe on blog.

Buttermilk Biscuits

2 cups flour
1/4 tsp. baking soda
1 tbs. baking powder
1 tsp. salt
6 tbs. butter-cold
1 c. buttermilk

Preheat your oven to 450°F.

  1. Combine the dry ingredients in a bowl then
    cut the butter into pads and cut into the flour until it is all mixed.
     I use my hands to mix it all up. There will be chunks of butter. Thats ok.
    Add the buttermilk and mix until combined.
    If it appears on the dry side, add a bit more buttermilk. It should be wet.
    Turn the dough out onto a floured board.
    Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick.
    Use a round cutter to cut into rounds. I use the top of a cup.
    You can gently knead the scraps together and make a few more, but they will not be anywhere near as good as the first ones.
    Place the biscuits on a cookie sheet- if you like soft sides, put them touching each other.
    If you like"crusty" sides, put them about 1 inch apart- these will not rise as high as the biscuits put close together.

    Bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.

Gooey Layered Cookie Bars

1 stick butter
1 1/2 c. graham cracker crumbs
 Mix together and then press into a 9x13 greased pan. 

Top with:
1 c. chocolate chips
1 c. peanut butter chips
1 c. butterscotch chips
chopped nuts (optional)
 coconut (optional)
Spread evenly over crumbs
Then cover the entire bars with 
1 can sweetened condensed milk

Bake at 350 for 25 minutes or until brown and bubbly.
Cool completely and then cut into bars.

Oat Bran Muffins

3/4 c. whole wheat flour, or gluten free flour
3/4 c. oat bran
1/2 c. brown sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1 mashed banana
1/2 c. applesauce
2 egg white or 1 egg
2 tbs. coconut oil
1/2 tsp. vanilla
1/2 c. shredded carrot
1/2 c. walnuts (optional)
1/2 c. dates (optional)

Mix dry ingredents in a bowl and wet in a bowl. 
Then combine them together and add the carrots, walnuts and dates.
I like to add blueberries sometimes too. 

Put into muffin pans evenly and 
Bake at 350 for 20 mins.

Carmel Apple Dip

1 8 ounce package low-fat cream cheese, softened
3/4 c. brown sugar, packed
1/2 c. powdered sugar
1 tsp. pure vanilla extract
3/4 c. English Toffee Bits
3 tart apples sliced 

In a small mixing bowl with an electric mixer, 
beat together the cream cheese, vanilla, 
and sugars on medium speed until smooth.
 Stir in toffee bits.
Serve with sliced apples or fruit.

Easy Pizza Dough

2 Tbs yeast
2 c. warm water
4 Tbs oil
2 tsp salt
2 tsp sugar
5 c. flour

Dissolve yeast in water. 
After dissolved, stir in other ingredients. 
Knead all together. 
Let rise about 5 minutes then roll out onto pizza pan. 
Add  sauce, chesse and toppings.
Bake at 425 for 20-25 minutes.

Homemade Peach Jam

4 c. ground up peaches
1/4 c. fresh lemon juice
1 1/2 c. sugar
5 heaping Tbsp clear gel
1/2 tsp. ascorbic acid

Wash and peel peaches. Smash then all up
and put into large pot. Add the other ingredients
and stir together well. Bring to a boil and let boil 
for about 10 mins and until thick. Stir constantly
to prevent sticking. Then pour into hot clean jars
and put lids on. As they cool, they will seal. 

*I usually 4 times this recipe and it makes 12 filled pint sized jars.

Garlic Cheddar Biscuits

Mix Together:
 2 c. bisquick
1/2 c. water
1 c. cheddar cheese

In a bowl melt:
1 stick butter
1 tsp. parsley flakes
1/4 tsp. dill weed
1/4 tsp. itialian seasoning
2 Tbs. parmesan cheese

Plop spoonfuls of biscuit dough onto a cookie sheet 
that has been greased lightly with your buttery garlic stuff. 
Then with a pastry brush, brush garlic butter over biscuits. 
Bake at 400 for 10-14 minutes. Serve hot!

Garlic Chicken Pasta

16 oz. bow tie pasta
3-4 minced garlic cloves
1 c. whipping cream
2-3 boneless chicken breast
1/2 T. pepper
1/2 c. butter
1/2 lb. bacon, cooked and crumbled
1/2 c. parmesan Cheese
  
Grill or cook chicken then cut up. 
Boil Pasta. 
In pan melt butter
add garlic, whipping cream, pepper, parmesean cheese. 
Whisk together on low hear for 4-5 minutes. 
Drain Pasta and add cream sauce,
cut-up chicken and bacon. 
 Top with some parmesan cheese.

Homemade Ice Cream

1 quart half and half
1 pint whipping cream
1 can condensed milk
 1 c. sugar
1 T. vanilla
pinch of salt

Whisk all together until mixed and fill to milk line.

*Can add any kind of fruit.
*Peaches 
*Mashed bananas/strawberries
*Candy bar chunks

The list goes on...
 
 For mint chocolate chip:
Do 1 tsp mint extract instead of vanilla
Several drops of green food coloring
and mini chocolate chips.

 


Oatmeal Banana Waffles

1 c. dry oatmeal
1 c. egg whites
1 c. low fat cottage cheese
1 tsp. vanilla
2 ripe bananas
1 tsp. cinnamon

Blend everything in a blender 
and pour onto hot waffle iron!

Slow Cooker Quinoa Chicken Chili

1 cup of quinoa, rinsed
1 14 oz can of petite diced tomato
1 small can green chilies
1 can black beans-drained
1 can pinto beans-drained
1 can corn-drained
4 c. chicken stock
2 large chicken breast
1 tsp. garlic salt
1 tsp. cumin
1 tsp. crushed red pepper
(can reduce if worried about heat)
2 tsp. chili powder

Put all ingredients into a crock pot
 and cook on low for 6 hours. 
Can cook on high for 4 hours.
But with this I think slow and low is better. 

Top with sour cream or plain yogurt, cheese
avacado and cliantro.

Amazing flavor, healthy and easy!

Homemade Sloppy Joes

2 pounds ground hamburger
1 small onion
Brown together and drain.

Add in:
1 15oz can tomato sauce
1/2 c. ketchup
1 tsp. salt
1/2 tsp. pepper
1 clove garlic
2 T. vinegar
2 T. worcestershire sauce
2 T. brown sugar

Stir all together and simmer 
until there is no liquid left. 
About 15 mins.
Serve on warm buns!

Julie's Stuffed Shells

24 jumbo pasta shells cooked and drained.
Set aside to cool.

In a bowl mix:
1 pint ricotta cheese-we use low fat skim
2 eggs
2 c. chopped up small broccoli
or spinach
3/4 c. mozzarella cheese
1/2 c. grated parmesan cheese
3/4 c. shredded monterrey jack cheese
2 tbs. sour cream
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg(optional)
1 tsp. italian seasoning
2 cloves garlic

Stuff mixture gently into shells and place in a greased 9x13 pan.
Cover shells with 1 large jar of favorite spaghetti sauce.
Top with mozzarella and parmesan cheese. 

Bake uncovered at 350 for 35-40 mins.

Healthy Egg Salad


6 hardboiled eggs 
2 celery stalk, diced tiny
 2 radish, diced (optional)
 3 tbsp. non-fat greek yogurt 
3 tbsp. mayonnaise 
garlic salt
 salt and pepper
 
Can eat plain, serve on celery stick or whole wheat bread 
 
 

Baked Beans

1/2 lb bacon cooked and crumbled
In a little of the bacon grease, brown 1 chopped onion. 

Add:
1 can kidney beans, drained and rinsed
1 can great northern beans, drained and rinsed
1 can black beans, drained and rinsed
1 large can Bush's Baked Beans
1/2 c ketchup
1 tsp mustard
3/4 c brown sugar
2 tsp vinegar
1 tsp salt
Mix all together 
Bake at 350 for 1 hour 
Or you can dump into crock pot for the day

Turkey Meatloaf Muffins

2 lbs. ground turkey
3 egg whites
1 cup quick cooking oats
½ tsp ground cumin
½ tsp dried thyme
2 tsp dry yellow mustard
2 tsp black pepper
2 tsp chipolte pepper spice
1 tsp salt
2 tbsp garlic powder
1 diced onion
2 diced celery stalks

Directions:

Pre heat oven to 375
  Spray muffin pay with some cooking spray

Mix all the ingredients in one large bowl until well combined.  
Roll the mixture into balls and place each one in the muffin pan.

Bake for 30 minutes or until cooked through

Sour Cream Noodle Bake

1 lbs. ground hamburger
1 can 15 ounce tomato sauce 
1/2 tsp. salt 
1 clove garlic
Freshly ground black pepper
 1 bag of egg noodles 
1/2 c. sour cream
 1-1/4 c. cottage cheese
 1/2 c. diced green onions
1 c. grated sharp cheddar cheese

In a frying pan brown meat and drain. 
Add tomato sauce salt and pepper and garlic.
 Set aside. 

Cook Noodles and drain.

In a bowl mix:
Sour cream, cottage cheese and green onion together.
Stir this mixture into the noodles.

Then layer the noodles with the meat sauce in a 9x13 pan. 
Top with sharp cheddar cheese. 

Bake for 20-30 mins until hot and bubbly.
Serve with green salad and crusty bread!

Chicken Tortiellini

1 package of three cheese tortellini
2 grilled chicken breast diced
2 cloves garlic
1/2 onion
2 Tbs. olive oil
1 large tomato
1/2 bag baby spinach
1 c. chopped mushrooms
1/2 c. heavy cream
1/2 c. parmesan cheese
salt and pepper to taste
italian seasoning

In a saucepan saute garlic and onion and then add spinach and mushrooms. Add cream and seasoning and bring to a boil for a few minutes to cook down. Add grilled chicken. 
Pour over cooked and drained pasta. Stir and top with cheese.

Grandpa JD's Baked Beans

Saute in 2 Tbs. oil:
1 chopped onion
1/2 chopped green pepper
1/2 c. chopped yellow
2 chopped small zucchini
1 chopped small yellow squash

Add:
2 cans of Bush's baked beans
3 Tbs. diced jalapenos
1/2c. ketchup
2 Tbs. brown sugar
Lawrys seasoning salt to take. 
Let simmer for a half hour and serve.

Grandma Sue's Clam Chowder

1 c. finely chopped onion
1 c. diced celery
2 c. finely diced potatos
2 cans minced clams
3/4 c. butter
3/4 c. flour
1 quart half and half
1 1/2 tsp. salt
dash of pepper
2 Tbs. red wine vinegar

Drain juice form clams and pour juice over chopped vegtables in a large sauce pan. Add enough water to barely cover vegetables. Simmer with lid in pot on medium heat until tender. 

In another pan:
Melt butter and add flour. Slowly add cream stirring constantly. Add drained clams and vinegar into butter flour sauce. Mix together with vegetables and water(undrained). Season to taste with salt and pepper. Heat through. Serve with warm crusty bread!

Grandma Sue's Teriyaki Sauce

1 bottle of Yoshida's teriyaki sauce
1 peeled and grated ginger root
1 Tbs. red pepper flakes
3 cloves minced garlic
1 can pineapple juice
1 c. brown sugar




Grandma Sandage BBQ Sauce

Saute together in a sauce pan:
1 finely chopped onion
1c. finely chopped celery
2 Tbs. butter

Add:
2 Tbs. vinegar
2 Tbs. brown sugar
1 small bottle ketchup
3 Tbs. worchestershire sauce
1 Tbs. mustard
1 c. water

Simmer for an hour or so until it cooks down a bit. 

Debbie's Salsa

46 oz. tomato juice
1 can diced tomatos
1 chopped onion
1/8c. garlic salt
1 small can jalapenos-drained
2 Tbs. sugar
2 tsp. pepper

In a blender put chopped onions and cover tiwth some of the tomato juice. Pour into large bowl. Put some jalapenos into the blender and cover with tomato juice and blend. Pour into the bowl. Run diced tomato quickly through the blender and pour into bowl. Add everything else, stir and refrigerate. It will get hotter as it sits!

*I like to add cilantro in with the diced tomatoes

Amazing Baked Ziti

Red Sauce:
Cook 1 pound of sausage
Add favorite marinara sauce (We like classico)
Set aside.

White Sauce:
1 brick of cream cheese
1 1/2 c. milk
2 cloves garlic minced
1/2 c. parmesan cheese
Mix and set aside.

Cook and drain 1 box of ziti noodles.

Layer in a 9x13 pan
noodles
white sauce 
red sauce
Top with grated mozzarella cheese. 

Bake 350 for about 40 mins.


Easy Chinese Noodles

1 package of chinese noodles
Cooked and drained.

Mix together:
1/4 c. soy sauce
2 cloves garlic chopped
2 Tbs. rice vinegar
 1 tsp. chili flakes
1/3 c. canola oil
1 Tbs. sriracha hot chili sauce
 
2 scrambled eggs
1/2 c. green onion chopped 
1/2 c. finely chopped peanuts(optional)
 
Toss all ingredients into the noodles and serve.
We like to have edamama beans and a salad with the noodles.
 
*You can buy the noodles and sriracha sauce in the chinese food section at any store. 
*I also double this for our family.
 


 
 
 

Ghost Cupcakes

1 softened brick of cream cheese
1/3 c. sugar 
1 egg
1 c. chocolate chips
 Mix together!

Make chocolate cupcake batter and fill with 

"Ghost Filling"

Drop your cupcake batter into cupcake liners
and put a spoonful of the "ghost filling" on top. 
It will drop into the middle as they bake. 

Frost and decorate for Halloween!

*You can also use the filling just as a cream cheese filling for any cupcake.

Sausage and Rice Casserole

In a frying pan, fry:

1 pound of sausage
1 onion, chopped
2 celery stalks chopped
Drain and rinse if you want.

Add:
1 c. rice
5c. water

Simmer for 30 mins. Stirring occasionally.

Serve with a green salad and fruit!

Chocolate Mint Brownies

Brownie Base:
1box brownie mix
prepared and baked
according to box.
Cool and spread the
filling on top.

Filling:
2 1/2 c. powdered sugar
3 tbs. butter
3 tbs. whipping cream
2 oz. of cream cheese softened
1/4 teaspoon mint extract
2 drops green food coloring

Topping:
1/3 c. whipping cream
1/2c. chocolate chips
1/3 c. butter
Melt in the microwave just
enough to mix smooth and shiny.
Top on cooled filling.

Chicken and Stuffing Casserole

1 box or package of herb stuffing
3-4 chicken breast cut into strips
swiss cheese
1/2 c. homemade cream of chicken soup
or
1 can of cream of chicken soup
1 c. sour cream
green peas
pepper

In a 9x13 place cut up chicken season with pepper and top with swiss cheese. 
Then top with soup and sour cream that has been mixed together.
Then spread the peas all over the dish and top with the stuffing. 
Sprinke the stuffing with a little water and cover with foil. 
Bake at 350 for about 45 mins.
 
 

Homemade Cream of Chicken Soup

4 c. chicken broth
1½ cups milk
¾ cup flour
 ½ tsp. onion powder
 ½ tsp. garlic powder
½ tsp. black pepper
 1 tsp. salt
  1. Combine the chicken broth and ½ cup of the milk in a large saucepan. Bring to a low boil.
  2. Meanwhile, in a small bowl, whisk the flour and seasonings into the remaining 1 cup milk until a smooth, thick mixture forms.
  3. Pour the flour and milk mixture into the saucepan with the broth mixture over low heat and stir continuously, whisking as the mixture simmers. Continue to simmer and stir/whisk until the mixture is smooth and thick, 5-10 minutes. The mixture will thicken a bit as it cools.

Pioneer Women Salsa

1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
1/4 cup Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
1/4 teaspoon Sugar
1/4 teaspoon Salt
1/4 teaspoon Ground Cumin
1/2 cup Cilantro (more To Taste!)
1/2 whole Lime Juice
 
Put all ingredients into a blender and pulse to desired consistency.

Chocolate Sour Cream Bundt Cake


Put ingredients in a sauce pan and heat to melted.
Set aside.
1 c. unsalted butter
1/3 c. cocoa powder
1 tsp. salt
1 c. water

 Then in a separate bowl whisk together:
2 cups flour
1 3/4 c. sugar
1 1/2 tsp. baking soda
2 large eggs
1/2 c. sour cream
 1 tsp. vanilla

Then add the melted chocolate mixture and stir together. 
Pour into greased bundt pan. 

Bake at 350 for 40 mins. 

Cool and dump onto plate then drizzle with glaze.

For the chocolate glaze:
1/2 c. chocolate chips
1 1/2 T. corn syrup (or agave nectar)
1/2 c. heavy cream
1 1/2 T. sugar

Orzo Pasta Salad


12 ounces orzo pasta 
6 cups chicken broth  
2 cups grape or cherry tomatoes, halved 
4 tablespoons thinly sliced chives or green onions 
3 tablespoons chopped fresh basil 
1 cup arugula or baby spinach, coarsely chopped 
Salt and pepper to taste 
1 cup feta cheese, crumbled 
½ cup pine nuts, toasted (heat them in a dry skillet over medium-low heat, tossing often until golden)
 1/4 cup red wine vinegar 
2 tablespoons fresh lemon juice  
1 teaspoon honey 
1/3 cup olive oil

Cook Pasta and add all the ingredients. Make the Dressing and pour over the pasta! Yum!

Ice Cream Crunch Bars

2 1/2 c. rice krispies
1 c. chopped pecans
1 1/2 c. shredded coconut
3/4 c. brown sugar
  A few shakes of cinnamon
1 stick butter, melted
 1/2 gallon vanilla ice cream


Mix all ingredents together and dizzle with melted butter. 
Mix that and put into a 9x13 pan. Bake in a 300 degree oven for 30 mins
stirring half way through cook time. 

As the mixture cooks line another 9x13 pan with foil.
When mixture is toasted and done.

Put half of it onto the foil and press.
Top with ice cream evenly.
Then put the remaining mixture on top.
Press it down good and freeze.

Serve plain or with strawberry, chocolate or caramel topping!

Smore Bars



1 (12 oz.) box of Golden Grahams
1 bag (2 c.) chocolate chips
3/4 c. light Karo syrup
4 T. butter
1 tsp. vanilla
3 c. mini marshmallows
 
Melt chips, karo, butter and 
2c. of marshmellows 
in a sauce pan.
After it's all melted add the 
last cup of marshmellows and stir
just barely melting.
Pour in box of cereal.
Stir until all combined.
Pour into a 9x13 pan!
Cool and Enjoy!

Deep Dish Chocolate Oatmeal Cookie Bars

Cookie Mixture
 
Mix together:
 2 sticks butter
2 eggs
2 1/2 c. flour
1 tsp. soda
1 tsp. salt
2 c. brown sugar
2 tsp.vanilla
1/3 c. milk
3 c. oatmeal

Chocolate

In a saucepan:
1 can eagle brand
1/3 c. butter
1 tsp. vanilla 
2 c. semi sweet choco chips

Spread 3/4 of the cookie mixture in a 9x13 pan.
Pour chocolate on that and then 
spread remainingcookie mixture on top. 
Bake at 350 for 25 minutes.
Let cool and cut into bars!
